White Wine-Shallot Sauce with Lemon and Capers 

Ingredients: Two tablespoons canola oil, Two large shallots, minced (about 1/2 cup), One half cup dry white wine, Two tablespoons fresh squeezed lemon juice, Four tablespoons cold unsalted  butter, One tablespoon capers, rinsed and drained; One tablespoon chopped fresh parsley. Salt and ground pepper to taste. 

Preparation: Sauté shallots in hot oil until translucent.  Add wine and reduce slightly, then add butter.  Add lemon juice and capers.  Simmer slowly and add parsley when serving.

Great over fish!
