Authentic Mexican Tortilla's

Ingredients: Three cups of all purpose flour, Two teaspoons of baking powder, Two teaspoons of salt, Three-quarters cups of shortening or lard, Three-quarters cup hot water.

Preparation: Combine the flour, baking powder and salt. Either by hand or with a pastry cutter, cut in the shortening till the mixture is crumbly. If the mixture looks more floury than crumbly, be sure to add additional shortening till it is crumbly. Add about three-quarters cup of hot water to the mixture, or just enough to make the ingredients look moist. Knead the mixture with your hands until bowl sides are clean. Let the dough rest covered for about an hour. Take the dough, and pull it apart into ten to twelve balls. Roll out on a lightly floured surface until tortilla reaches about one eighth inch in thickness. Place tortilla on a medium hot cast iron skillet. Cook for about one to two minutes.
