Chez Pablo’s Civeche
Ingredients: One pound of small shrimp (click the following link to learn more about shrimp sizing, fresh if you can get it or frozen (usually cooked). The shrimp will not need to be cooked if they are fresh since the acid from the lime juice will cook them for you. One or two (depends on how spicy you want it) Serrano peppers, diced fine; A couple of garden variety red radishes, diced fine; One small clove of garlic, minced, One quarter cup of finely diced shallots, One quarter cup of finely chopped cilantro, One teaspoon of lime zest, the juice of three or four fresh limes (no bottled lime juice here), One quarter teaspoon of chipotle chili powder, One avocado cubed (small), One eighth teaspoon of salt and pepper.
Preparation: Clean and devein shrimp if necessary then mix with the rest of the ingredients and marinate in the refrigerator for at least an hour before serving. Great by itself or with chips, crackers or small pastries.
