From the Kitchens of Chez Paul
Mock Capri Salad Dressing
Ingredients: Two tablespoons of olive
oil, One quarter cup of a good wine vinegar, Two cloves of minced
garlic, One teaspoon of sea salt, One teaspoon of ground
peppercorns, Two teaspoons of Worcestershire sauce, Two teaspoons of
chopped chives, One half cup chopped parsley, One half cup of
mayonnaise, and One half cup of sour cream
Preparation: Place all ingredients in a
blender and mix until well blended. Serve over shredded iceberg
lettuce with some chopped parsley and toss. Don't get fancy with any
additional ingredients. A small amount of dressing goes a long way.
Add a little and toss then add a little more and toss again. Salt
and freshly ground pepper to taste. Serve cold with a frosted fork
and plate.
