Sausage Tortellini Soup by Tracy Mata Ingredients: One pound Italian Sausage (hot or mild), One large onion, chopped, One garlic clove, pressed, Three (14 1/2 ounce) cans diced tomatoes undrained, One (8 ounce) can tomato sauce, One cup dry red wine, Three carrots, diced, One tablespoon sugar, Two teaspoons Italian seasoning, Three small zucchini, sliced, One (9 ounce) package refrigerated cheese filled tortellini, One half cup shredded parmesan cheese. Preparation: Discard sausage casings. Cook sausage, onion and garlic in a Dutch oven over, medium-high heat, stirring until sausage crumbles and is no longer pink; drain. Return mixture to pan. Stir in broth and next six ingredients; bring to a boil. Reduce heat; simmer 30 minutes. Skim off fat. Stir in zucchini and tortellini; simmer ten minutes. Sprinkle each serving with cheese. Yield 10 cups Prep:25 min. Cook: 46 min.
