Rosie’s Rice  

Ingredients: Two cups of long grain rice, Six tablespoons of canola oil, Four cups of chicken broth, Four ounces of tomato sauce, One small onion or shallot, chopped; three cloves of minced garlic, One medium tomato ,chopped; One and one half teaspoons of cumin, Two teaspoons of garlic powder, One small carrot peeled and diced.  

Preparation: In a deep skillet heat oil and sauté rice until lightly browned. Add onion, garlic and diced tomato, sauté for a few minutes. Add tomato sauce and chicken broth, bring to a boil. Add spices and salt to taste. Cover and simmer for approximately twenty-five minutes.
