Peanut
Butter Cup Pie
Ingredients:
Crust: Eighteen shortbread cookies, finely crushed;
One cup melted butter.
Layer one: Two ounces softened cream cheese, Two
cups cool whip, One half cup confectioner’s sugar, One half cup creamy peanut
butter
Layer two: Four ounces softened Philadelphia
cream cheese
Four cups cool whip, One half cup confectioner’s sugar
Two ounces melted semi sweet chocolate.
Real Whipped Cream for garnish.
Preparation:
Crust: In a medium bowl, stir together cookies and butter with a fork until
moistened then press into a ten inch pie pan. Place in freezer for about twenty
minutes or until good and firm.
Layer one:
Beat together all ingredients, spread onto the frozen crust, and freeze for ten
to fifteen minutes.
Layer two:
Mix together all ingredients except for the chocolate. Stir in the chocolate.
Place this mixture on top of the peanut butter layer.
