Open Face Crab & Artichoke Melt  

Ingredients: Two cups Parmesan cheese (6 ounces) One and one half cups mayonnaise, One and one third cups chopped onion, Twelve ounces of crab meat, drained, One 13 oz. can quartered artichokes or artichoke crowns in water, drained & chopped, One half cup plus two tablespoons of chopped fresh parsley. Six to eight slices of French or sour dough bread. One tomato sliced thin. Six to eight slices of Monterey Jack cheese.

Preparation: Mix first five ingredients and half cup parsley in bowl to blend. Transfer crab mixture to 8x8x2, glass baking dish.  Cover and Refrigerate until ready to serve.  

Preheat oven to 400.  Bake crab mixture until bubbling and heated through, about 25 minutes. Preheat broiler.  Place bread in single layer on large baking sheet. Divide hot crab mixture between bread slices, using generous amounts. Top with tomato slices, then Monterey Jack cheese slices. Broil sandwiches until cheese melts.  Watch carefully to keep from burning.
