Lidge's Chocolate Cake Ingredients: Two cups of flour, sifted, Two cups of sugar, One teaspoon baking soda, One and a half teaspoons of salt, One cup of margarine (butter), Four tablespoons of cocoa, One cup of water, One half cup of buttermilk, Two eggs, One teaspoon of vanilla. Preparation: In a large bowl sift together two cups sugar, Two cups flour, One teaspoon Soda, One and a half teaspoons salt and set aside. Melt one cup margarine (butter) in small saucepan and add four tablespoons of cocoa and one cup of water, bring to a boil and remove. Pour over dry ingredients and beat. Add a half cup buttermilk, two eggs and one teaspoon vanilla. Mix well. Pour into greased floured 9 X 13 in. pan. Bake 350 for 30 min. Chocolate Frosting: Ingredients: One half cup of margarine or butter, Six tablespoons of buttermilk, Four tablespoons of cocoa, One pound of powdered sugar, One cup of your favorite chopped nuts, and one teaspoon of vanilla. Preparation: Melt one half cup margarine or butter, In a medium bowl add melted margarine or butter along with six tablespoons of buttermilk, Four tablespoons of cocoa. Add 1 pound of powdered sugar. Beat w/mixer until smooth. Add one teaspoon of vanilla, One cup nuts, mixing well. Pour over slightly cooled cake while icing is warm. Serve immediately. |
