Courtesy of Chez Lane PearsonChez Lane's Pork Roast With Spicy Cranberry Orange Glaze Ingredients: One five pound pork loin center rib roast (with bone), One teaspoon of kosher salt, one teaspoon of ground ginger, one half cup sweet orange marmalade, one half cup dried cranberries, chopped; one tablespoon Dijon mustard, two an one half teaspoons of hot pepper sauce (Preferably Tiger Sauce), rosemary sprigs for garnish. Preheat oven to 350 degrees. Sprinkle pork roast with salt and ground ginger. Place pork roast, fat side up, in large roasting pan. Insert meat thermometer into center of roast (be careful not to touch bone). Roast two to two and one half hours until thermometer reaches between 155 and 160 degrees F. Meanwhile, combine orange marmalade, cranberries, mustard and hot pepper sauce in a medium bowl. Brush pork roast with mixture after one hour, then brushing every fifteen minutes. Remove roast to platter. Cover loosely with foil; let stand for fifteen minutes. Skim fat off pan juices. Serve roast with pan juices if desired. Garnish with rosemary sprigs.
