Nicole's French Onion Soup
Ingredients:
Four to five large yellow onions, Three Tablespoons butter, One quarter teaspoon
pepper, One tablespoon flour, Three cans beef broth, Three cups water, One bay
leaf, Two tablespoons parmesan cheese, One cup gruyere or Swiss cheese, Six to
eight toasted French bread slices.
Slice onions thinly. Melt butter over
med-high heat. Add onions and pepper. Sauté until onions caramelize (brown).
Sprinkle onion with flour and stir until all tract of flour disappears. Cook 1
minute longer - stirring constantly Gradually add broth, stirring constantly,
stir in water and bay leaf. Return to boil, stirring constantly. Reduce to low
and cook uncovered thirty to fourty minutes. Discard bay leaf. Taste - add salt
and pepper, if desired.
Put soup in ovenproof bowels. Place
toasted bread on top - then gruyere or Swiss cheese. Sprinkle on parmesan
cheese. Bake or broil until cheese is bubbly and brown.
