Enchilada's Del Oso Ingredients(Sauce): Two or three diced Jalapenos, Two medium shallots diced, Eight cloves of garlic minced, Thirty-two ounces of tomato sauce, Four tablespoons of chopped cilantro, Eight tablespoons of bacon grease, Four cups of beef broth/stock, Six tablespoons of chili powder, One tablespoon of pepper, One teaspoon of salt, Six tablespoons of all purpose flour. Preparation(Sauce): Sauté jalapenos, shallots and garlic in two tablespoons of bacon grease for 2-3 minutes. Combine tomato sauce, beef broth/stock, chili powder, cilantro, salt, and pepper with sautéed peppers and garlic. Melt the remaining six tablespoons of bacon grease in a small bowl and add flour to form a paste. Incorporate paste with sauce mixture and bring to a slow boil. Cook until thickened for about twenty minutes. Pour over enchiladas and serve. Sauce should cover about a dozen enchiladas. Ingredients(Enchilada's):
One pound of ground beef, Half pound of pork sausage, Two tablespoons vegetable oil, cup of chopped red onion, Two diced jalapenos, Two tablespoons of chili powder,
Two cloves of garlic minced, One teaspoon of cumin, One cup chopped green onions (garnish), One dozen flour tortillas, Half pound grated Monterey jack cheese, Half pound grated Mozzarella cheese,
Half pound grated cheddar cheese, One large can sliced black olives, Enchilada Preparation(Filling): Sauté red onions, garlic and jalapenos in tablespoons of vegetable oil and cook for 2-3 minutes; add ground beef and pork and brown. Add chili powder, cumin and ½ cup of water and let simmer until water has evaporated. Spoon meat filling on to individual tortillas and then add a small amount of grated cheddar, mozzarella and jack cheese to each. Pour one tablespoon of sauce over each tortilla and roll up. Spread some of the sauce over bottom of pan before placing enchiladas to prevent from sticking. Place in large glass pan. You should be able to fit six large enchiladas in a 13x7x2 pan, and then cover with sauce. Cover with remaining cheeses and sliced olives. Bake at 350 degrees for approximately 30 minutes. Garnish with green onions before serving.
