Confetti Insalata a la PauloIngredients: For best presentation the following ingredients should all be uniform
in size (fairly large chunks) when diced. Four medium tomatoes diced, One half
cup of diced celery, Eight medium white (firm) mushrooms diced, One cup diced
cucumber, One avocado diced, Eight ounces of sliced black olives, One cup of
diced green onions, One cup grated Romano cheese and one cup of Italian (Good
Seasons, etc.) dressing using a good wine vinegar. Preparation: Place all ingredients, except dressing and cheese, in medium size salad
bowl. Make sure to put ingredients
in the same order above. This preparation can be done ahead of time as long as
the tomatoes are on the bottom. When ready to serve, toss with dressing then add
grated Romano cheese and toss again. Plate for presentation and serve
immediately. |
