Chez Paul's Cilantro Tomatillo Sauce
Ingredients: One pound of tomatillos, without casings; One third cup red onion, chopped; Two or three seeded jalapeno chilies, chopped; Two cloves of garlic, minced; Two tablespoons of chopped cilantro, Two scallions, chopped, One teaspoon of salt, One teaspoon of pepper, and One teaspoon of chile powder.
Preparation: Put tomatillos in a large saucepan of salted boiling water and cook for about seven minutes. Drain and place in blender or food processor. Add red onion, jalapenos and garlic and blend until sauce is smooth. Add chili powder, salt and pepper and blend briefly. Remove from blender and add cilantro and chopped scallions. Serve with shrimp or chicken or over enchiladas.
