Chicken Broccoli Fettuccini
Chez Paul’s Chicken Broccoli Fettuccini
Ingredients: Four cooked chicken breasts w/o skin, shredded (or you could use a
prepared rotisserie chicken from the market); One cup of buttermilk,
Two to three cloves of garlic, minced; Two tablespoons on minced
shallots, One can (10 ¾ ounces) Cream of broccoli soup, Three
tablespoons of butter, Three ounces of grated Romano cheese, Three
cups of cooked fettuccini, One third cup of chopped parsley, One and
a half cups of cooked broccoli floweret’s.
Preparation:
Melt three tablespoons of butter in a large skillet. Add minced
garlic, shallots and sauté for two to three minutes, stirring
constantly. Stir in condensed soup, buttermilk and Romano cheese.
Heat until bubbling then add chicken. Cook on a low heat for five
minutes, covered. Remove from heat and toss with cooked fettuccini
and broccoli floweret’s (Prepared in microwave prior to addition).
Garnish with fresh parsley and some additional grated Romano cheese.
