Chez Paul ’s   Cottage Slaw

 

Ingredients: One head of cabbage, shredded; One half cup diced shallots,  Three tablespoons of chopped cilantro, Two cups small curd cottage cheese, One half cup plus two tablespoons of mayonnaise, One tablespoon of fresh lime juice, Two tablespoons of white vinegar, Salt & pepper to taste.

Preparation: Shred cabbage in large bowl and set aside. In a medium bowl combine remaining ingredients and mix well. Toss with cabbage and refrigerate for an hour before serving.
