Chez Paul's Winter Salsa

Winter Salsa by Chez Paul

When you want a good salsa and there are no great tomatoes! 

One 28 ounce can whole Roma tomatoes (drain reserving about half of the sauce), Seven fresh hothouse supermarket Roma tomatoes, sliced; Three Jalapeño peppers, sliced; Three Serrano peppers, sliced; Five scallions, One cup cilantro, Three cloves garlic, sliced; One shallot, sliced; Juice of one half lime, Two tablespoons Chipotle chili pepper powder (McCormick), One tablespoon Grandma’s chili powder, Two tablespoons olive or safflower oil, Two tablespoons white vinegar, One tablespoon Cholula pepper sauce (or Tiger sauce), salt & pepper.

Rough chop ingredients and place in food processor. 

Pulse chop for desired consistency.
