Pasta Primavera

Ingredients: One half cup of butter, Two medium garlic gloves, minced; One pint heavy whipping cream, Two teaspoons of chopped shallots, Three tablespoons of chopped parsley or cilantro, Two cups grated Romano cheese. Two cups of cooked broccoli floweret's, One and a half cups of sliced carrots, cooked, Two Cups of shredded chicken breasts, One pound of cooked fettuccini, One quarter cup of grated Parmesan. 

Preparation (Alfredo sauce): Melt butter in a medium size saucepan, add garlic and shallots and sauté for two minutes on medium low heat. Combine parsley and cream and add to butter and garlic mixture, mix well. Add Romano cheese and cook slowly until the cheese is melted completely. Cook longer for a thicker sauce. 

Preparation: Combine broccoli, carrots, shredded chicken breast and fettuccini. Toss with Alfredo Sauce and sprinkle with grated Parmesan or Romano. Serve immediately. Try serving with the Mushroom Madness Salad and a good French bread.
