Chez Paul's Mushroom Madness

Ingredients: One and one half dozen white button (medium) mushrooms (firm) sliced thin,
Two stalks of celery sliced thin, preferably from the heart, Six scallions cut into one inch
pieces and julienne, One small jar of artichoke crowns, drained and sliced thin, One half cup Peccarino Romano or good parmesan, One package of Good Seasons Italian
dressing using a good red wine vinegar and fresh vegetable oil.

Preparation: Prepare just prior to serving. Mix all prepared ingredients
and add salad dressing, toss. Sprinkle with cheese. Serve on chilled plate with
chilled fork for best results.
