Chez Paul’s Mexican Fiesta
Salad
Ingredients:
(Dressing) One half cup of Best Foods mayonnaise, One half cup of sour cream,
one quarter cup of buttermilk, one quarter cup of Heinz 57 ketchup, one half cup
of Pace Picante sauce, one tablespoon of chili powder, One teaspoon of cayenne
pepper, One half teaspoon of paprika, one teaspoon of fresh ground pepper, One
clove of garlic minced. (Salad) One head of iceberg lettuce, One half cup of
coarsely chopped cilantro, Two cups of shredded chicken (roasted), One cup of
grated pepper jack cheese, One quarter cup of sliced olives, One cup of broken
tortilla chips (good use for those chips at the bottom of every bag), One half
cup of chopped scallions. Preparation:
(Dressing) Combine all ingredients together and mix well, place in a covered
container and refrigerate for a couple of hours before serving. (Salad) Dice
lettuce into large pieces and place in a large mixing bowl. Add remaining
ingredients except tortilla chips. Toss salad dressing and salad just prior to
serving and add tortilla chips. Plate and serve.
