Chez Paul's Cream Of Asparagus

Ingredients: One and one half pounds of fresh asparagus, One tablespoon of diced shallots, One half cup of butter (one stick), Four tablespoons of all purpose flour, Six cups of chicken broth, One cup of heavy cream, One half teaspoon of salt and one half teaspoon of pepper

Clean and chop asparagus into one inch pieces. Place in a microwave safe container and cook on high for six minutes. In a large pan melt butter and add shallots, sauté for a couple of minutes. Add the flour one tablespoon at a time mixing well after each addition. Add heavy cream and four cups of chicken broth. When asparagus has finished cooking place into blender or food processor. Add two cups of chicken broth and blend at high speed for a couple of minutes. Add to cream mixture and stir. Cook over medium heat for about twenty minutes or until thickened. Add salt and pepper to taste. Serve when ready.
