Cheese Cake Supreme

Ingredients (Crust):  Eight Tablespoons butter, One cup brown sugar, One cup of flour, One-half teaspoon of salt, One-half cup of shredded coconut, One-half teaspoon of baking soda, One-half cup of crushed saltine crackers, One-half cup of walnuts or pecans
chopped extremely fine.

Preparation: In a large bowl, cream butter (softened) and brown sugar. Mix in the next six
ingredients and blend. Press mixture into a 10 or 12 inch spring form pan
covering bottom and half way up sides of pan and set aside.

Ingredients (Filling): Two large eggs, Eight ounces of cream cheese, One-half cup of sugar, One cup of Ricotta cheese, Three-quarters cup of sour cream, Four tablespoons of butter, One teaspoon of vanilla extract, One pint of sour cream and one-third cup of
sugar. 

Preparation: Place the eggs in a blender and mix a little. Add cream cheese and sugar, blend again. Add butter, sour cream and Ricotta cheese blending well after each addition. Add vanilla extract and mix. Pour into prepared pan and place in a 350 degree
preheated oven and cook for about 30 minutes. Check after 30 minutes or so. Cheese cake should be firm in middle if not place back in the oven for another five minutes and test again. Mix the remaining one pint of sour cream and one-third cup of sugar and pour over cheese cake and return to oven for approximately ten minutes. Remove from oven and cool for about a half hour and then place in the refrigerator. Should cool in the refrigerator for at least two hours. Serve with any fruit sauce and fresh berries or just plain.
