Chez Pablo's Five Alarm Chile
Ingredients:
One quarter cup of olive oil, Eight cloves of garlic, minced; Four medium yellow
onions, chopped; Three pounds of chuck roast cut into half inch cubes, One pound
ground pork sausage, Four Jalapeno chili's chopped, Two tablespoon of red pepper
flakes, One half cup chopped cilantro, Three 27 ounce cans of red kidney beans,
drained and rinsed, Four 29 ounce cans of tomato sauce, Three 29 ounce cans of
diced tomatoes, Seven or eight tablespoons of chile powder, Two tablespoons of
Cholula Hot Sauce, Two tablespoon of tiger sauce.
Preparation:
Sauté onion and garlic with olive oil in a very large stock pot for about five
minutes. Add sausage and chuck roast and brown for ten minutes, season
generously with salt and coarse ground pepper. Add cilantro, jalapenos and
pepper flakes, stir well after each addition. Add kidney beans, tomato sauce,
diced tomatoes, chile powder, and hot sauce. Simmer on low heat for three hours,
stirring frequently to prevent any scorching.
