Spicy Buttermilk Cheddar
Biscuits
Ingredients:
One tablespoon of butter, Three-quarters cups green onion, One and half cups of
flour, One half cup cornmeal, Two Tablespoons sugar, Two and one half teaspoons
of baking powder, One teaspoon of salt, One half teaspoon of baking soda, One
half cup or one stick of chilled butter cut into cubes, One and one half cups of
grated cheddar cheese, One egg, One cup of butter milk, One or two tablespoons
of diced green chilies, One egg, beaten with one tablespoon w heavy cream.
Preparation:
Preheat oven to 425°. Sauté green onions in one tablespoon of butter over
medium heat for a couple of minutes and remove from heat. Mix flour, cornmeal,
baking powder, sugar, baking soda and salt in a medium bowl. Cut in one half cup
of the cold butter until coarse in appearance. Then cut in cheddar cheese. (You
can also use a food processor for cutting in the butter and cheese). Transfer
mixture to a large bowl. Beat one egg in a small bowl with fork and add
buttermilk to make one cup; then add green onions and chilies. Form a well in
the dry ingredients and pour egg mixture into the middle, mix until well
moistened. Turn dough out onto a lightly floured surface and knead until dough
holds together. Roll dough to three-quarter inch thickness and cut out biscuits.
Place biscuits on cooking sheet and brush with egg and cream glaze. Bake for
approximately 15-18 minutes or until golden brown.
