Chez Paul's Baked Halibut Fillets

Ingredients: Six halibut fillets, Six tablespoons of butter, One cup of milk, One cup of heavy cream, One clove of garlic minced, One teaspoon on kosher salt, One teaspoon of pepper, One half teaspoon of dried thyme, One half teaspoon of dried oregano, Two tablespoons of lemon juice, One quarter cup of chopped chives.

Preparation: Rinse fillets and pat dry with paper towels. Place fillets in a large baking dish and season with salt and pepper. Place one tablespoon of butter on top of each fillet and set aside. Combine milk, cream and flour in a large sauce pan over medium heat. Stir until mixture thickens and begins to bubble. Add minced garlic, salt, pepper, thyme and oregano. Stir in lemon juice and pour over fillets. Sprinkle chives over fillets and add paprika. Bake at 350 degrees for twenty-five minutes and serve.
