Apple Blintzes 

Ingredients: Blintzes: Two eggs, Two tablespoons of salad oil, One cup of milk, Three-quarters cups of sifted all purpose flour, One half teaspoon of salt, Approximately a quarter cup of butter, One quarter cup of confectioners sugar, One cup sour cream. 

Ingredients: Apple filling: Two pounds of Granny Smith or other tart cooking apples, pared, cored and sliced; One cup of sugar, One teaspoon of cinnamon, One- quarter teaspoon of nutmeg, One-eighth teaspoon of ground cloves.

Preparation: Apple Filling: Using a medium saucepan, combine all ingredients. Cook over low heat for about fifteen minutes, stirring occasionally or until apple is tender. Set aside and let cool for about thirty minutes. 

Preparation: Blintzes: In a medium bowl, beat eggs, salad oil and milk until well blended. Add flour and salt and beat until smooth. Cover and refrigerate for approximately thirty minutes. Make blintzes one at a time. Melt one-half teaspoon of butter in a ten-inch skillet. Pour three tablespoons of batter into skillet and rotate pan to cover entire surface. Cook over medium heat until lightly browned on the underside, then remove from pan. Stack blintzes browned side up on wax paper or paper towel.

Once blintzes have been made, place three tablespoons of apple filling on each blintz. Fold two opposite sides of the blintz over the filling; then overlap the two ends, covering filling completely. Melt the rest of the butter in a large skillet. Place four blintzes, seam side down, into skillet and sauté till golden brown on the bottom; then turn and sauté other side. Place finished blintzes in a warm oven while completing the remaining blintzes.

Plate blintzes and sprinkle with confectioner’s sugar. Serve warm with a dollop of sour cream.
