Chez Paul's Cheese Cake Supreme

Ingredients (Crust):  Eight Tablespoons softened butter, One cup brown sugar, One cup of flour, One-half teaspoon of salt, One-half cup of shredded coconut, One-half teaspoon of baking soda, One-half cup of crushed saltine crackers, One-half cup of walnuts or pecans
chopped extremely fine.

Preparation: Line the bottom of a ten inch spring form pan with parchment paper and set aside. In a medium bowl cream together butter and brown sugar and salt. Then add flour, coconut, saltines, baking soda and nuts mixing well after each addition. Pour into lined pan and press mixture into pan and up the sides at least one and one half inches. Place into freezer while preparing filling.

Ingredients (Filling): Two large eggs, One 8 ounce package of cream cheese, One cup of sugar, One cup of Ricotta cheese, Three cups of sour cream, Two teaspoon of vanilla extract, Four tablespoons of butter.

Preparation: Use blender for quick results. Add eggs and cream cheese to blender and mix until smooth. Add one half cup of sugar, ricotta cheese, and butter, mix until blended. Add one cup of sour cream and vanilla and mix until smooth. Pour into prepared crust and bake for thirty minutes at 350 degrees. In a small bowl blend two cups of sour cream with one half cup of sugar and set aside. Remove pan from oven (should be firm when shaken slightly) and pour sour cream mixture over cheesecake. Place back in oven and cook for an additional ten minutes. Let cool for thirty minutes or so before refrigerating. Cheesecake should be refrigerated for at least a couple of hours before serving.
