Celery Root Salad
 
Ingredients: One celery root, salt, pepper, garlic salt, one-third pound of shrimp, quarter cup of mayonnaise, shredded lettuce, paprika.

Preparation: Simmer celery root in boiling water, cover for about 30 minutes or until a fork will go in easily.  Cool, then peel and dice  in 3/4 inch cubes.  Season with salt, white pepper and garlic salt to taste.  Toss to coat with seasoning, add small salad shrimp [about 1/3 lb.] and toss again.  Add enough mayonnaise to moisten all ingredients.  Serve on lettuce and sprinkle with a little paprika for color.
